Couverture is a bean-to-bar chocolate maison built around one idea: chocolate should taste like where it came from. We ferment, dry, roast, conch, and temper our own chocolate from whole cacao beans sourced from eight real growing origins — Madagascar, Ecuador, Venezuela, Papua New Guinea, Peru, Vietnam, Ghana, and the Dominican Republic — never from remelted industrial couverture, and never with vegetable-fat substitution standing in for real cocoa butter.

Every batch is small enough that one person tastes it at every stage — from the fermentation box through the conche to the finished, tempered bar. We keep our release count small on purpose. A wide, thin catalogue of remelted couverture dressed up with flavoring is not what we do; a narrow, deep catalogue of real single-origin and inclusion bars, alongside a serious wholesale couverture line for professional kitchens, is.
We work with home bakers and gift buyers through our retail bars, and with chocolatiers, pastry chefs, and restaurant kitchens through our professional couverture line — sold by the block and callet case, not the wrapped bar.
