Milk couverture is the hardest of the three to temper consistently at scale, since milk fat competes directly with cocoa butter for space in the crystal lattice — see the tempering visualizer for exactly why milk chocolate's working temperature runs lower than dark. We formulate this one with Venezuela's naturally low-bitterness base specifically because it holds its character even diluted by the milk solids and extra sugar milk chocolate requires.
Milk solids are added at the conching stage, not after, for a fully integrated, non-grainy melt in finished ganache work.
